The best mushroom stroganoff

Serves 2

Ingredients:

1 x large container chestnut mushrooms (around 400 grams)

1 x red onion

1/4 cup cashew nuts

1 x tsp dijon mustard

1 x tsp dried thyme

1 x tsp smoked paprika

1/2 x tsp onion powder (optional)

1/4 cup nutritional yeast (optional)

1 x tsp vegetable stock

2 x tbsp soy sauce

1 x small handful fresh parsley

250ml boiled water

black pepper to taste

Method:

1. Lightly fry onions in a pan for a few minutes until soft and golden, then add mushrooms and fry a further 5 minutes until softened.

2. Make your sauce by blending the cashew nuts, stock, boiling water, mustard, thyme, smoked paprika, soy sauce, and nutritional yeast in a blender or magic bullet etc.

3. Pour sauce over mushrooms and onions and stir together over a low heat.

4. Add parsley and black pepper, and serve over your choice of potatoes, rice, or pasta anyway you like!
